New Menu Onboard the VIA Rail’s Canadian

The VIA Rail Canada trans-continental route connecting Toronto and Vancouver, will be serving a new menu. The 78 new meals were selected through a Menu Creation Challenge, which brought eight VIA chefs together for a two-day competition.

The challenge was meant to reinvent the already delectable menu in a fun environment. VIA chefs were apart of the competition since they have experience working in the confines of a small train kitchen. “I am extremely pleased with the results from this challenge.  Our VIA chefs are an extraordinarily talented group who truly understand the high standard of VIA’s dining service,” said head Chef Martin Gemme, the VIA rails planning services representative. “They are the best people to create these dishes since they also know how to operate in our small onboard kitchens, which demands ingenuity and creativity.”

The menu includes breakfast, lunch, and dinner, made to order. The Canadian will continue to feature regional cuisine on-board, some of which are cheesecake stuffed berry French toast, a bacon sautéed roast beef ravioli, or try the honey and soy glazed duck breast.

The menu is posted online and is available onboard starting in June 2012. If traveling across Canada, take the VIA rail for a cuisine experience as breathtaking as the scenery aboard the Canadian.
